Tasty and ideal breakfast full of proteins and goodness of veggies.

 

Ingredients—


Moong dal 1 cup
Urad dal 1 tbsp
Curd 1/3 cup
Eno 1 packet
Veggies like peas, paalak, cauliflower, cabbage, corn, capsicum, beans etc.
You can use the veggies you like.
Green chillies 4
Ginger 1 piece
Curry leaves 8
Coriander leaves
Oil 1 tbsp + for greasing the idly mould
Rai 1 tsp
Hing 1/4 tsp
Haldi 1/8 tsp
Salt to taste

 

Method–
Wash the dals and soak in water for 2 to 3 hrs
Chop the veggies, green chillies, ginger and curry leaves
Grind the soaked dals in a mixer
Add the curd and beat well.
Heat the oil in a pan.
Add rai and hing.
When they splutter add the chopped green chillies, ginger, curry leaves and the veggies.
Add the haldi powder.
Saute for 5 minutes.
Add to the batter.
Add the chopped coriander leaves.
Mix well.
Grease idly mould.
Spread some corn.
Add the eno and a spoon of water.
Mix well and immediately pour into the mould. Steam cook the idlys and serve hot with coconut chutney.
