Special Mixed Vegetables - BY Pramila Goswami
Ingredients-
Potato 1 cut into cubes
Sweet potato 1cut into cubes
Purple yam 1 cup cut into cubes
Yam 1 cup cut into cubes
Surti paapdi 1cup
Brinjals 6 cut into big pieces
Green peas 1/2 cup
Green chana 1/2 cup
Green tuvar 1/2 cup
Methi leaves chopped 2 tbsp
Slit green chillies 2
Green chillies 6chopped fine
Ginger 2″ piece grated
Curry leaves 10
Oil 4 tbsp
Til 2tsp
Hing1/2 tsp
Lemon juice 1tbsp
Sugar 1 tbsp
Salt to taste
Coriander leaves chopped 3 tbsp
Method–
Heat oil in a pan.
Add the till and hing.
Add slit green chillies and curry leaves.
Add the cubed root vegetables.
Saute for 5 minutes on slow flame.
Now add the rest of the vegetables.
Cover and cook till they are half cooked.
Add salt, chopped green chillies and ginger.
Mix well.
When the vegetables are cooked add sugar and lemon juice.
Mix well.
Cook for 3 to 4 minutes.
Add chopped coriander leaves and mix.
Take into serving bowl.
Garnish with some chopped coriander leaves, grated coconut and some til.
Serve hot with Puri, roti or Parathas.
Goes very well with hot puris!
