Rajasthani Mawa Kachori -Asha Ranjan

Rajasthani Mawa Kachori is a scrumptious dessert from the state of Rajasthan. This has a crispy and crunchy sweet crust which is packed with sweetened mawa/khoya dry fruit mixture. Rajasthani Mawa Kachori or Mawe ki Kachori is a traditional Rajasthani dish. Different from other kachoris this lip-smacking Kachori is served as a sweet dish.


INGREDIENTS

For the dough:

• 2 cups all-purpose flour

• 3 tbsp ghee (clarified butter)

• Pinch of salt

• Water to knead the dough


For the filling:

• 180g khoya/dried whole milk

• 2-3 crushed cardamom pods

• 1 tsp cardamom powder

• 1/4 cup dry fruits, finely crushed (almonds, pistachio, cashews)

• 3/4 cup powdered sugar


For the sugar syrup:

• 100g sugar

• 25 ml water, or as needed

• 2 crushed cardamom pods

• Ghee/oil for deep frying


For garnishing:

• Chopped almonds and Pistashio

• Dried rose petals


For The Dough:

1. Add flour, salt, and ghee to a mixing bowl. Rub mixture gently with fingers.

2. Add water and knead into a smooth dough.

3. Cover and set aside for 30 minutes.


For The Filling:

1. Heat mawa/khoya in a pan.

2. Cook it on medium heat until it starts to melt and leave the sides of the pan. (Keep stirring.)

3. Turn off the heat.

4. Add powdered sugar, crushed cardamom, cardamom powder, and chopped dry fruits.

5. Mix everything well to combine.


For The Sugar Syrup:

1. Add sugar, crushed cardamom and water to a pan.

2. Let it boil till it has reached 1 string consistency.

3. Remove from heat and set aside.


For Assembling Kachoris:

1. Divide the dough into 6 equal parts.

2. Take one dough ball and roll it into a disc of about 2-inch diameter using a rolling pin.

4. Place about 1 1/2 tbsp of filling in the center and bring the ends together.

5. Seal tightly and flatten to make discs.

6. Roll gently again to make a 3-4 inch circle.


For Frying:

1. Heat ghee/oil in a pan over medium heat.

2. When the ghee is medium hot, drop the kachoris into the pan.

3. Fry them on medium heat till slightly browned from both the sides.

4. It will take about 8-10 minutes to fry.

5. Remove fried kachoris on an absorbent paper and let them cool completely.


For serving:

1. Heat the sugar syrup once again if that is cold.

2. Drop the cooled kachoris in the warm sugar syrup and let them bathe for 2 minutes.

3. Take them out on a serving plate.

4. Garnish with chopped almonds, Pistashio and rose petals 

5. Drizzle some more syrup on kachoris and enjoy.
