Multi millets phulka roti with वालोर ढोकली

Boring broad beans😏😏which no one ever likes to have for any meal!But I feel instead of having fancy restaurant style stuff we should give a try to such traditional नानी ,दादी recipes which are tasty ,healthy as well as very filling ! Restaurant style food youcan get anywhere ,anytime!we must make our children to eat such satisfying aromatic dishes.Moy be you must be thinking I am old school!😃
Anyhow lets begin with the recipe!
Recipe for वालोर(broad beans) ढोक्ली


Ingredients-:


Broad beans I.e वालोर गुजराती में और सेम की फली हिन्दी में destringed,split and broken into big pieces 2cups
Green chillies ginger crushed or finely chopped 3tsp
Wheat flour 2tbsp
Besan 2tbsp
Multigrain atta or bajra flour 2tbsp
Sooji 2tbsp
Chilli pd 3tsp
Dhania jeera pd 2tsp
Turmeric pd 1/2 tsp
Sugar 2tsp
Salt as per taste
Lemon juice 1.5 tsp
Oil 1tsp for tempering 4tsp for dhokla
Curry leaves 12
Coriander leaves finely chopped 2to3tbsp
Tadka
Mustard seeds 1/2tsp
Cumin seeds 1/2 tsp
Ajwain1/4 tsp
Hing 1/2 tsp


Method-:


Heat 1tsp oil in a small pressure cooker add mustard,cumin,ajwain,1/4 tsp of hing.
Let them splutter.
Add half of curry leaves and green chillies ginger.
Add half of turmeric pd.
Add broad beans pieces. Saute for 2 minutes.
Add half of the spices,salt and sugar.
Mix well.
Add 1 cup of water.
Pressure cook till one whistle.
For dhoklis
Mix all the flours and sooji in a bowl.
Add salt,rest of the spices, green chillies,ginger, coriander leaves,curry leaves,hing.
Give a good mix.
Add the oil,salt.
Make a stiff dough sprinkling some water.
Break into pieces.
Give them the shape of small pedas.
Open the cooker and on the flame.
Add half cup of water.
When it starts boiling add the sugar and drop the dhoklis into it.

Again close the lid and cook till one whistle.
When cooker is cooled open and check the consistency.
Add hot water if needed.
Add the lemon juice and mix well.
Garnish with coriander.
Serve hot with rotis and hot khichdi!
