Mixed vegetable dal

When you are not in a mood to make dal n subji tru this simple dal with mixed vegetables!
Ingredients–


Arhar dal 1/2 cup
Raw mango 1/2
Vegetables _ cauliflower,carrot, red pumpkin, radish ,Beans etc 3/4 cup
Turmeric powder 1/4 tsp
Ghee 2 tsp
Mustard seeds 1 tsp
Cumin seeds 1/2 tsp
Methi seeds 1/4 tsp
Hing 1/4 tsp
Slit green chillies 3
Chopped ginger 1/2tsp
Curry leaves 10
Coriander leaves chopped 1 tbsp
Dhaniya powder 1/2 tsp
Chilly powder 1 tsp
Haldi powder 1/8 tsp
Jaggery 1 tbsp (optional)
Salt to taste

 

Method–


Wash and soak the dal for atleast 30mins.
Add haldi and cook in a pressure cooker till very smooth.
Steam cook the raw mango.
Mash and extract the puree.
Mix with the cooked dal.
Mash very well till smooth.
Add the ghee in a pan and heat.
Add the methi seeds,rai and jeera.
When they splutter add the hing.
Add the curry leaves, green chillies n ginger.
Mix well
Add the veggies.mix well
Saute for 3 to 4 minutes.
Add dhaniya jeera pd and chilly powder.
Add half cup of water cover and cook till vegetables are cooked .
Add the cooked dal , mango mixture.
Add salt and jaggery.
Mix well.
Add water and adjust the consistency.
Simmer for 10 minutes.
Garnish with chopped coriander leaves.
Serve hot with jeera rice or plain rice and roti!
