Here’s a recipe for Misal Pav, a popular dish, by Gayatri Rattan:

**Ingredients:**

For Misal:
– 1 cup Matki, soaked overnight
– 2 medium onions, finely chopped
– 2 medium tomatoes, finely chopped
– 2-3 green chilies, finely chopped
– 4-5 cloves garlic, minced
– 1-inch ginger, minced
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 tablespoon Misal masala (available in Indian grocery stores)
– Salt to taste
– 2 tablespoons oil
– Coriander leaves for garnish
– Lemon wedges for serving

For Garnish and Serving:
– 6-8 Pav (Indian bread rolls)
– Finely chopped onions
– Finely chopped coriander leaves
– Sev (fried chickpea noodles)
– Tamarind chutney
– Green chutney

**Instructions:**

1. **Cooking the Matki:** Drain the soaked Matki and rinse them well. In a pressure cooker, add the soaked peas, enough water to cover them, and a pinch of salt. Pressure cook for 3-4 whistles or until the peas are cooked through but not mushy. Drain any excess water and set aside.

2. **Preparing the Misal:** Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until they turn translucent.

3. Add minced garlic, ginger, and green chilies. Sauté for a minute until the raw smell disappears.

4. Add chopped tomatoes and cook until they turn mushy and oil starts to separate.

5. Add turmeric powder, Misal masala, and salt to taste. Mix well and cook for another minute.

6. Add the cooked white peas to the pan and mix until well combined with the masala. If the mixture is too dry, you can add a little water to adjust the consistency. Simmer for 5-7 minutes to allow the flavors to meld together.

7. **Assembling the Misal Pav:** To serve, ladle the prepared Misal into serving bowls. Garnish with chopped onions, coriander leaves, and a handful of sev.

8. Serve hot Misal with pav (Indian bread rolls) and lemon wedges on the side. You can also serve it with tamarind chutney and green chutney for extra flavor.
