Malabar Egg Curry- Dipti Chainani Advani

Ingredients
4 / 5 eggs
2 tablespoons coconut oil or any vegetable oil of your choice ( I used coconut oil)
1/2 teaspoon mustard seeds
1 table spoon ginger garlic crushed/ paste
2 medium onions chopped
2 green chillies medium hot
2 dried red chilies 
2 spring curry leaves
2 medium tomato ripe grinder
1/2 teaspoon turmeric powder
1 tablespoon coriander powder
1/2 tablespoon kashmiri chilli powder
1/2 tspn fennel seeds
1 cup coconut milk
1/2 teaspoon black pepper coarsely ground
salt
Cilantro (Coriander leaves) to garnish
Process
Boil the eggs and remove the shell.
Then in a pan add oil and mustard seeds , let it crackle then add curry leaves , green chilies , red chilies
and onion.
Sauté it well till it’s light brown then add ginger garlic paste , tomato paste. Then add haldi , garam masala, coriander powder and red chili powder
Let it cook on slow for 10-12 mins
Then add fennel seeds, black pepper and lastly coconut milk.
Once it comes to a boil add the boiled eggs and of course in the gravy salt to taste
Garnish with cilantro or curry leaves.
Voila – malabar curry ready to eat. Serve with rice or paratha
