KANJEEVARAM IDLY By Pramila Goswami
Kanjeevaram idly is a special flavorful idly which is offered to shri Varada raja swami at KANJEEVARAM in tamilnadu.This place well known for silk saris!Actually this idly is prepared in a large bamboo baskets lined with banana leaves. I have used masala dabba katoris and paper muffin moulds.
Ingredients:
Rice 1cup
Urad dal 1/2 cup
Methi seeds 1/tsp
Curd 2tbsp
Ghee 2 tbsp
Pepper,jeera crushed coarsely 1tbsp
Ginger powder 1/2 tsp
Cashewnut pieces 2tsp
Hing 1/4 tsp
Curry leaves 8
Ginger grated 1tsp
Salt to taste
Method-
Soak rice in one bowl,urad dal and methi in another bowl for 4 hrs.grind rice coarsely. Grind dal and methi into fine smooth paste. Do not add more water while grinding. Mix together. Allow to ferment for 6 to 8 hours.
Then add the curd to the batter. Heat the ghee add crushed pepper,jeera,ginger powder,cashewnuts curry leaves, grated ginger ,hing.fry and pour into the batter. Add the curd ,salt mix well. Pour into the greased moulds .steam for 15 mins.
Serve hot with chutney of your choice.I served with tomato chutney!
