Idiyappam with its variations By Pramila Goswami

Navratras are round round the corner!Many of us observe fasting on these days. So I have come up with two unique recipes which we can enjoy on fasting days!
1.Idiyappam. Or SEVAI with its variations. Idiyappam is traditional recipe of kerala and Tamilnadu.

Idiyappam recipe

Ingredients: 


kutti (buckwheat) flour1 cup
Salt
Oil 1/2 tsp
Water 1cup


Method-

  
Heat the water in a pan, when it starts boiling add the salt and oil. Simmer the gas and add the flour little by little, keep stirring.. Off the flame.. Mix well .There should be no lumps. Cover and keep aside for 12 to15 mins. Then knead well with greased palm till it becomes smooth and soft. Fill in a chakli mould with ‘sev’ jali. Press into a greased plate or idli stand. Steam cook for 15 mins.Allow to cool. This is the basic recipe.
Variation 1.Break it lightly with finger tips (looks like vermicelli)
Now heat1tsp of ghee or oil in a pan add jeera,peanuts,curry leaves,ginger chilli finely chopped or paste. Add the ‘vermicelli’ toss lightly add lemon juice and coriander leaves and serve!


Variation 2: 


you can serve it as a dessert.Make the basic recipe with just a pinch of salt. Sree with sweetened coconut milk .add some flavor of your choice like cardamom to the coconut milk!
