Here’s a recipe for Dal-Bati-Churma by Asha Ranjan:

 

**Dal (Lentil Curry):**

Ingredients:
– 1 cup tuvar dal (pigeon peas lentils)
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 2 green chilies, chopped
– 1 teaspoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 2-3 cloves garlic, minced
– 1 tablespoon ghee (clarified butter)
– Salt to taste
– Fresh coriander leaves for garnish

 

Instructions:
1. Rinse the tuvar dal thoroughly and soak it in water for about 30 minutes.
2. Pressure cook the soaked dal with turmeric powder and salt until it becomes soft and mushy.
3. In a separate pan, heat ghee and add cumin seeds and mustard seeds. Let them splutter.
4. Add chopped onions, green chilies, and minced garlic. Sauté until onions turn golden brown.
5. Add ginger-garlic paste and sauté for a minute.
6. Add chopped tomatoes and cook until they turn mushy.
7. Add turmeric powder, red chili powder, and salt. Mix well.
8. Pour the cooked dal into the pan and mix everything together.
9. Let the dal simmer for 5-10 minutes on low heat.
10. Garnish with fresh coriander leaves before serving.

 

 

**Bati (Baked Wheat Dough):**

Ingredients:
– 2 cups whole wheat flour
– 1/2 cup semolina (sooji)
– 1/2 cup ghee (clarified butter)
– 1 teaspoon carom seeds (ajwain)
– Salt to taste
– Water for kneading

 

Instructions:
1. In a mixing bowl, combine whole wheat flour, semolina, carom seeds, salt, and ghee.
2. Slowly add water and knead into a stiff dough.
3. Divide the dough into equal-sized portions and shape them into round balls.
4. Preheat the oven to 180°C (350°F).
5. Place the dough balls on a baking tray and bake for 30-40 minutes or until they turn golden brown.
6. Once baked, remove from the oven and brush with ghee for extra flavor.

 

 

**Churma (Sweet Crumbled Wheat Dough):**

Ingredients:
– 1 cup whole wheat flour
– 1/4 cup ghee (clarified butter)
– 1/4 cup powdered jaggery (or sugar)
– 1/2 teaspoon cardamom powder
– Chopped nuts (optional)

 

Instructions:
1. In a mixing bowl, combine whole wheat flour and ghee. Mix well to form a crumbly texture.
2. Heat a pan and add the crumbled mixture to it.
3. Roast the mixture on low heat until it turns golden brown and fragrant.
4. Remove from heat and let it cool down.
5. Once cooled, add powdered jaggery (or sugar) and cardamom powder. Mix well.
6. Garnish with chopped nuts if desired.

**Serve Dal-Bati-Churma:**
1. Serve hot bati with ghee and dal.
2. Serve churma as a sweet accompaniment.
3. Enjoy the traditional Rajasthani delicacy of Dal-Bati-Churma with your favorite pickles and salads.
