Mango Kulfi Bites -By Asha Ranjan
Ingredients–
2 cups milk
14 dates , deseeded and soaked
¼ cup cashews, soaked
1 cup mango chunks
chopped pistachios, almonds and dry rose petals for garnish
Instructions–
Start by soaking deseeded dates and cashews in warm water for 15-20 mins.
In a sauce pan add milk, soaked dates, cashews and cook on medium heat until the milk comes to a boil and dates and cashews becomes soft and mushy.
In a blender jar add mango chunks and milk mixture and blend till you achieve a smooth consistency.
Take a silicone ice cube tray and add chopped pistachios and almonds in the bottom.
Pour the kulfi mixture over it, cover it with a foil and insert sticks in the middle.
Let it refrigerate for 5-6 hours or till the kulfi is set.
Demould your mango kulfi bites and enjoy.
