Ragda Pattice - By Pramila Goswami
Ingredients–
For Pattice
Potatoes 1/2 kg
Corn flour 3 tbsp
Bread crumbs 2 TBS
Salt to taste
Oil for shallow frying
For Ragda–
Dry peas 1 cup soaked for 6to 7 hrs
Ginger green chilly paste 2 tsp
Tamarind a lemon size
Jaggery 2tsp
Chilly powder 1 tsp
Dhania powder 1tsp
Jeera powder 1/2tsp
2 “Cinnamon, 2cloves powdered
Hing 1/4 tsp
Jeera 1/2 tsp
Salt to taste
Coriander leaves
Oil 2tsp
For serving–
Green chutney
Sweet chutney
Chaat masala
Bhuna jeera powder
Curd
Sev
Coriander leaves
Pattice__ steam cook the potatoes.
Cool and peel them.
Grate them.
Add the corn flour, bread crumbs and salt.
If you like it a bit spicy green chilly ginger paste can be added.
Mix well.
Make tikkis and shallow fry on tawa .
Ragda–
Pressure cook the soaked peas.
Mash them roughly.
Heat oil in a pan.
Add jeera and hing
When they crackle add ginger chilly paste
Saute for a minute.
Add dhania powder, jeera powder, chilly powder,.
Mix and add boiled peas.
Add tamarind juice,salt and jaggery.
Add the cinnamon,clove powder.
Add water if required.
Simmer for 10 minutes.
Add the chopped coriander leaves.
Serving
Place the tikkis, pour the ragda on it
Do the topping with curd, green chutney, sweet chutney.
Sprinkle chaat masala, bhuna jeera powder, Sev , chopped coriander.
