One pot meals

Chennai spl sambar sadam (rice)
Ingredients–


Rice 1cup (normal rice not basmati or any other aromatic variety)
Arhar dal 3/4 cup
Turmeric powder 1/4 tsp
Tamarind lemon size
Oil 2 tbsp
Coriander seeds 3tbsp
Chana dal 1tbsp
Methi seeds 1/4 tsp
Red chillies 12 to 15 can be + or _ as per your choice
Fresh coconut grated 1/3 cup
Vegetables beans,brinjals,peas,red pumpkin,broad beans, curry leaves etc
Salt to taste
Tadka
Oil 1 tbsp
Mustard seeds 1 tsp
Red chilly 1
Methi seeds 1/4 tsp
Hing
Ghee to serve

 

Method–


Wash dal and rice.
Drain off the water.
Soak for at least 30 minutes.
Add 5 cups of water.
Add turmeric and cook it in a cooker like khichdi.
Mash it well.
Heat 1 tbsp oil in a pan.
Add coriander seeds, red chillies, methi seeds, chana dal and roast them .
Grind this with grated coconut.
Add some water and make paste
Soak tamarind in hot water.
Extract the pulp and keep aside.
Chop the vegetables.
Heat the oil in a pan for tadka .
Add the mustard seeds, methi seeds, red chilly and hing.
When it starts spluttering add the curry leaves and all the chopped vegetables.
Saute for 2 minutes.
Add 1/2 cup of water cover and cook till the vegetables are cooked.
Add the tamarind pulp, ground masala and salt.
Allow it to boil.
Add the cooked rice mixture.
Cook till they are well blended.
Add some hot water if required to get the right consistency.
Pour some desi ghee and serve this flavourful rice hot with fried paapad and potato waffers.
You can add onions to the tadka before adding the vegetables.
