Minapa roti is mainly prepared in Andhra as breakfast or evening snack! They prefer having this with jaggery syrup or with some spicy pickle. Traditionally it is prepared with idly batter! But I tried with jowar rawa instead of idly rawa. It turned out equally good! Ingredients–
Jowar Rawa 1 cup Urad dal 1/2 cup Methi 1 tsp Salt Oil for cooking
Method–
Wash jowar rawa, drain off the water. Cover and keep aside. Mix urad dal and methi wash well. Soak for 4 to 5 hrs . Grind into a fine paste Grind the jowar rawa also coarsely. Mix with ground dal. Allow it to ferment.(6 to 8 hrs) Heat a heavy bottom pan. Add 4tsp of oil. Pour 1/3 cup of the batter. Cover and cook on slow flame till the sides become golden brown and starts leaving the sides of the pan. Flip it carefully and cook the other side also. Serve hot with jaggery syrup , coconut chutney or pickle .
