Ingredients–
Basmati rice 1cup
For the paste
Fresh mint 3/4cup
Green chillies 2
Ginger 1″piece
Green cardamom 1
Cinnamon 1″piece
Cloves 2
Grind them with a little water to make a paste.
Ghee 4 tsp
Cumin seeds 1/2 tsp
Bay leaf 1
Cashew nuts 5
Coriander leaves
Chilly powder 1/2 tsp optional
Salt to taste

Method–
Wash the rice.
Drain off the water and keep aside
Heat ghee in a pressure cooker.
Fry the cashew nuts and keep aside.
Add cumin seeds and bay leaf to the same ghee.
When they splutter add the ground pudina paste.
Saute for a minute.
Add the rice and fry for 2 minutes.
Add salt ,chilly powder mix.
Add one and half or two cups of boiling water.
Pressure cook on slow flame for 8 minutes.
Remove from gas
Release the pressure and open the cooker.
Take the rice in a serving bowl.
Garnish with chopped coriander leaves and fried cashew nuts.
Serve hot with cool cucumber raita!
