Instant lemon pickle
This instant pickle is served in weddings and other functions.This is spicy and tangy! Goes very well with dal rice, sambar rice and excellent with curd rice!

Ingredients-


Lemon 6
Green chillies 3(my twist)
Haldi powder 1/2 tsp
Salt 5 tsp or as per taste
Oil 1/2 tbsp
Mustard seeds 1tsp
Methi seeds 1/4 tsp
Hing 1/2 tsp
Chilly powder 2 tbsp

 

Method-


Cut lemon and green chillies into pieces. Put them in a bowl,add salt and haldi.Add 1/4 cup of water. Cover it with a plate and place in a pressure cooker. Cover cooker .cook ton medium flame till 5 whistles. Cool the cooker.Take out the cooked lemon . heat the oil in a pan add mustard seeds and methi allow it to splutter. Add hing and pour over the cooked lemon .Add chilly powder mix and store in jar.It will stay good in refrigerator for more than a month.
Normally they don’t add sugar or jagger to their pickles. But I will give sweet variation for those people who like to have khatta meetha achaar!
Variation_ after removing the lemon from the cooker add 3 tbsp of sugar or jaggery. Allow it cook for 8 to 10 mins on low flame. Cool and rest of the process is same!you will love this ” khatta meetha pickle” with parathas,rotis and khichdi. Kids can enjoy in their lunch box!
