BAKED MATAR KACHORIS BY PIHU.RAJMALANI

Ingredients

 

For Dough:-
  • 5 cup all purpose flour
  • 2 tbsp sujee
  • 1 tsp salt
  • 3 tbsp Ghee/oil
 
For Filling:-
  • 1 cup green peas
  • 2 green chilli
  • 4 cloves garlic
  • ½ inch ginger
  • 1 tbsp chilli powder
  • ½ tsp chat masala
  • 1 tsp amchur
  • ½ garam masala
  • 1 tsp fennal sides
  • 1 tbsp sesame seeds
  • 1 tsp turmeric powder
  • 1 tsp Ghee
  • For Dip
  • 1 cup fresh coriander
  • ½ cup fresh curd
  • ½ tsp salt
  • ½ tsp red chilli powder
  • ½ tsp amchur powder
 

Method

1)  take a bowl add flour +Sujee + salt + Ghee. Mix it well. Now add water (1/2 cup). Knead a dough. Now keep dough on resting for 15-20 min. 

2)  Take a jar add peas, chilli, garlic & ginger blend it well.

3)  Now take a pan add ghee peas paste fry for 2-3 min. add oil and all species. Fry it for 2 min. now add salt now fry mixture till mixture drop pan. Take out on the plate keep it for cool down.

4)  Now take a dough make small balls(8-10 balls) now make circle from dough around 4-5 inch. Now add stuffing between in mid and pack it like a modak or momos. From the pack side roll it lighting to remove lines.

5)  Now keep kachories for 15-20 minutes. Preheat OTG for 10 min. Take out from kachori from fridge put in pre heated oven. Now bake it 15min or color turn brown. Now take a jar add Amachur, coriander, salt, chilli and curd. Serve dip and kachori.
