Recipe for bhature

 

Sooji 1/2 cup
Curd 2tbsp
Maida 2.5 cup
Salt 1.5 tbsp
Sugar 1.5 tbsp
Soda 1/2 tsp
Oil 2tsp
Soak sooji in curd and a little water for 15 minutes. Take maida in a bowl add sugar and salt to it. Now add soaked rawa .add soda mix well add water if required. Add oil and knead well for atleast 10 minutes. Apply some oil and rest for 3to4 hrs. Knead again and make smooth balls.Roll into bhaturas and deep fry.


Recipe for Chole–


Kabuli chana 250 gms
Tomatoes 2
Green cardamom2
Cinnamon 2
Black cardamom 1
Coriander seeds 2tsp
Shahi jeera 1/2 tsp
Pepper 1/2 tsp
Chole masala 2tsp
Ginger 2 pieces
Jeera 1tsp
Chilli powder 1tsp
Coriander powder 1tsp
One potato peeled ,cut into cubes
Salt to taste
Oil 2 tbsp
Green chillies and coriander leaves for garnishing
Soak chana overnight.


Heat a pan dry roast the whole masalas on low flame for 3to4 mins.grind them along with tomatoes and one piece of ginger.heat oil in a pressure cooker. Add jeera.let it splutter. Add the tomato paste and saute. Add all dry masala powders. Wash the soaked chana and add to the tomato paste. Add water 1.5 cups approximately. Add salt.Add the potato and salt .pressure cook till chana is cooked. Allow to cool a little. open the cooker.mash the potatoes.Transfer into serving bowl. Garnish with ginger,coriander leaves and green chillies. Serve hot with hot bhaturas.
I didn’t use onion garlic.you can use according to your taste.
