Red Pumpkin Subji By Pramila Goswami

Yet another neglected vegetable though full of nutrients and antioxidents कद्दू red pumpkin!Let us make it with unique flavor using minimum ingredients!

 

Ingredients:-

 

Red pumpkin peeled and cut into cubes 

2cups oil

2 tsp green chilly

2 slit 

curry leaves8

turmeric powder1/4tsp

 mustard seeds 1/2tsp

urad dal 1/2 tsp

sesame seeds(til) 5tsp

whole red chillies 5

jaggery 1/2 tsp optional

salt to taste

coriander leaves to garnish

 

Method:-

 

Heat a pan dry roast sesame seeds and 4 red chillies.cool and make coarse powder. Heat oil in a pan add mustard seeds, urad dal,1 red chilly.when it splutter add curry leaves ,green chilly,and turmeric powder. Add the pumpkin cubes mix and cook covered on medium flame. Add salt and jaggery .keep stirring. Add the powdered sesame seeds,mix and turn off the gas.garnish with coriander leaves and its ready to serve!
