Stuffed brinjal biriyani recipe
Ingredients:
Basmati rice 1cup
Cardamom 1
Cloves 2
Cinnamon 1 piece
Brinjals small 5 to 6
Stuffing for the brijals
Coriander leaves finely chopped 2 tbsp
Grated coconut 2tbsp
Roasted peanut powder 1tbsp
Lemon juice 1tsp
Sugar 1/2 tsp optional
Ginger garlic chilli paste 3tsp
Gramflour 1tbsp
Dhania jeera powder 1tsp
Salt to taste
Oil 2 tbsp
Masala for rice
Pudina 1/4cup
Coriander leaves 1/4cup
Dhania seeds 2tsp
Green chillies 5
Poppy seeds 1tbsp
Garam masala powder1/2
tsp
Bay leaves 2
Garlic 6 flakes
Ghee 2tbsp
Salt to taste
Cashewnuts 6
Chopped coriander leaves
Mint leaves for garnishing
Method:-
Wash the rice .add one and half cup water ,cardamom,cloves,cinnamon.soak for 1hr. Cook ina pressure cooker.
Mix all the ingredients for stuffing and stuff in the brinjals. Heat oil in a pan add the stuffed brinjals.cover and cook on slow flame till brinjals cooked.
Take the ingredients for the masala (for rice) in a mixer jar .grind it a paste.
Heat ghee in a pan fry the cashewnuts.
Keep aside.
Fry the ground paste in the same ghee.
Add the cooked rice .
Mix gently till the masala gets combined.
Add the brinjals.
Mix gently.
Take in a serving bowl.
Garnish with fried cashewnuts, coriander leaves,and mint leaves.
Serve with raita.
