गेहूँ का खिचडा और गेहूँ की खीर -- By Pramila Goswami

Traditional recipes गेहूँ का खिचडा और गेहूँ की खीर both are enjoyed in winters.
For this we need to dehusk the wheat! In olden days people used pound the wheat to dehusk ! This process is laborious and time consuming!
We can do this in mixie!
Take the wheat in a bowl sprinkle water and keep it covered for 8 hrs.
Now take the wheat in a mixer jar and crush it pulse mode
इस गेहूँ को एक थाली में लेके अच्छे से झटकलें। By doing this the husk will be removed. Now this wheat is ready for khicha and kher!


Khichda
Ingredients–


Dehusked wheat 1cup
Moong dal yellow or green 1/2cup
Toor dal 1/4 cup
Milk 5 cups
Saffron a few strands
Sugar 3/4 cup
Ghee 3tbsp
Cashew nuts 2 tsp
Almonds 2tsp
Elaichi powder 1/2 tsp

 

Method–

  
Wash wheat and dals.
Take in a pressure cooker.
Add milk and saffron.
Add 1tbsp ghee and cook on medium flame till cooked.
Cut the nuts into big pieces
Take ghee in a pan and fry the nuts.
Remove the nuts and keep aside.
Add cooked wheat mixture to the ghee in the pan.
Add sugar (or jaggery) cook for 15 minutes on medium flame.
You can add more ghee for better taste.
Add elaichi powder.
Remove from fire.
Garnish with nuts and serve.

 

Kheer
Ingredients–


Dehusked wheat 1/4 cup
Milk 800ml
Saffron a few strands
Sugar 4tbsp or jaggery
Blanched and chopped almonds 4
Chopped pistachios for garnish

 

Method–


Wash the wheat to remove extra husk.
Take in a heavy bottom pan.
Add saffron
Cook on a slow flame till wheat is cooked.
Add sugar and almonds.
Cook for 10 to 12 minutes on slow flame.
Add elaichi powder.
Garnish with pistachios.
Serve hot in winters.
Chilled kheer also makes a good dessert.
